If I want to add a discrete GPU in the future, only 1 PCIe, instead of 2 for example, would limit me? If yes, in what way? I'm asking because just now I'd be inclined to decide on Be quiet Straight Power BQT E8-400W, but it has only one PCIe. BTW, what do you think of it?

I'm also considering another option - assembling this PC myself and buying Seasonic G360 mentioned by Tator Tot. But first I'd like to know: am I likely to damage the processor, motherboard or something else I listed in my first post because of my lack of knowledge or experience?

As long as you check all of your connections and don't try to force anything, you shouldn't break anything by trying to insert a device.

The component you'd have to be easy with is the CPU, and that's just lowering it into the socket so you do not bend the pins on it.

As for efficiency, it has little impact on your power bill. I'd worry about quality over efficiency first.
With that said, I'd still recommend the PurePower L8-430CM if you're looking for an all around good experience with your build.

Like wise, if it does not cost you a lot of extra money, I would just have the shop build it for you.

Currently, the strongest card which requires 1x PCI-E, is 7850. That's not a bad GPU to pair i3 with.

What do you think about this one:

Be Quiet Straight Power E9 400W PSU

I'm ready to buy this one because of the efficiency. In my country electricity prices are among the highest in the EU and will be even higher after the introduction of EU's energy regulations pretty soon, so saving a few watts here and there is really important for me in the long term. Can you please tell me if this E9 400W psu is a reliable model without any faults known to you? Is it as quiet as said and can it be connected to matx board? Do its connectors make it at least moderately future-proof?

Yes, yes and yes. It's a good pick.

Yeah, it's a solid choice. The efficiency gains will be pretty good at high & low loads as well (not so much in the middle though.)

The only thing it does loose out on, is not being modular.
