On my stock E8400 and Gainward GTX460 GS GLH I saw max. 275W from the wall (~220W DC) during games.
Put another 20-30W DC more for GTX560 factory OC'ed and I'd say you'll be perfect fine.

All at default frequencies.

So basically 68xx series are fighting against GTX460.

Any good brand 500W PSU is more than plenty for your setup.
Choosing one depends on budget. You can't go wrong with a Corsair/Antec/Seasonic/Enermax for example.
