So, when you do the Coolbits reg hack, what does that do?
Just set the limit on the Overclocking Configuration slides in the nVidia Control Panel to whatever the card is supposedly actually capable of?

No, it makes the overclocking slides available. Without coolbits you don't have OC access.

you can use Rivatuner also, to overclock both ATI and Nvidia cards, plus you can unlock pipes and monitor temps,voltage,make your own fan Daemon's and overclocking profiles to boot ;)

Well... honestly my only intention is to make the GPU's run as hot as possible during 3DMark (without locking up) so I can see if the Corsair Nautilus is really worth a damn. ;)

I use rthdribl (http://www.daionet.gr.jp/~masa/rthdribl/) or 3D View from ATITool to heat-up my GPU.
